Vietnamese cooking is a delicious light cuisine, making the most of an abundant supply of fresh vegetables and herbs. Basically, it can be divided into three categories, each pertaining to a specific region. The food in the Northern part of Vietnam, through stir, fries and noodle based soups reflect the influence of Chinese cooking. Southern Vietnamese cooking has an extensive use of different kinds of vegetables, fish, and other seafood; it typically also holds the most French influence. Lastly, Central Vietnamese cooking is perhaps the most unique of all and probably the most distinct in taste - being much spicier and much more colorful. |
