Paulo Sia
Sous Chef


Chef Sia graduated from La Salle Greenhills in 2000 and proceeded to strive for his culinary career in the Center for Culinary Arts (CCA), Manila. In 2000, Chef Sia worked for C2 Bar and Restaurant in Makati City, and then moved on to work for Linden Suites Hotel in Mandaluyong from 2001 to 2002. Chef Sia also set up and managed the Multinational Catering Services (MCS) as the chef-patron from 2001 to 2003. Today, Chef Sia is the sales chef of Unilever Foodsolutions for the Luzon region, where he is tasked with account and menu developments as well as culinary demonstrations

Datu Pendatun
Sous Chef

Chef Datu embraced vegetarianism while studying Anthropolgy at the University of the Philippines in Baguio. His gastronomic interests took a complete turn when he entered the Center for Asian Culinary Studies where he received a Diploma for Culinary and Pastry Arts with Honors. He apprenticed in Café Ysabel, Ziggurat Cuisine, and in the Indian Kitchen of Spices Restaurant of the Peninsula Manila. Datu started to work for Unilever Foodsolutions as a Chef-Consultant in Mindanao in 2005. In 2006, Datu became the Sales Chef handling both the Visayas and Mindanao Regions where he is heavily involved with cooking demonstrations, recipe engineering, and account development.

Joanne Limoanco
Executive Chef


Before joining UFS, Limoanco worked as an executive sous chef at Dusit Hotel Nikko and a chef instructor at the De La Salle University, College of St Benilde.

During her free time, Limoanco enjoys travelling and rediscovering old culinary roots and trends.

Ryan Lastra
Sous Chef


Lastra has worked all around the world— beginning with his chef de partie training at Shangri-La Makati, he went on to Ritz-Carlton Halfmoon Bay as a saucier, and was a sous chef at Nordstrom Café and Blue Pointe Restaurant in San Francisco CA.

Lastra enjoys sports like basketball and football activities like cooking and partying with friends.

Martin Kabigting
Sous Chef

Graduated in 2002 from De La Selle University — College of Saint Benilde School of Hotel, Restaurant and Institution Management.
He was trained in Mandarin Oriental Manila in The Brasserie, Tivoli and its banquet kitchen. His first job was at Schwarzwalder, a German restaurant in Makati City. He then transferred to Mandarin Oriental Manila and was part of the pioneer kitchen staff of Paseo Uno. Kabigting was a chef de partie in Dusit Hotel Nikko prior to becoming a UFS chef.
